Sushi By Bou experiencing hyper growth, brought me into their organization to assist with a couple of urgent projects. David Bouhadana and his team needed a system for ensuring Department of Health compliance and a system for consolidating their weekly inventory and food ordering.
To ensure DOH compliance, I routinely inspected the restaurant in areas including food & safety as well as equipment & facility maintenance. I designed a DOH checklist for the staff to integrate into their daily operations, which became a vital training tool for future employees and locations.
By instituting this system their restaurants met and exceeded the minimum DOH safety requirements.
